Sweet Sauces

The main object of Sweet Sauces, is to complement the dessert. If the dessert is tart, tone it down a little with a bland sauce. If the dessert is bland use a sauce to which a tablespoon of liqueur imparts the final shazzzaam! 

The main things to remember are: Don't over beat cream bases or cream garnishes. Do cook egg sauces over not in boiling water. Be sure that sauces thickened with flour or cornstarch are lump free, and cook them thoroughly to avoid any raw taste.

 

 
 

Coffee Sauce

Beat 2 eggs
Beat into them very slowly,
1/2 cup very strong boiling coffee
Add:
1/4 cup sugar
1/8 tsp. salt
Cook OVER not IN boiling water, and stir the sauce until it coats a spoon. Chill. Shortly before serving, fold in 1/2 cup whipped cream.
(Optional 1/4 cup candied ginger).

Hot Fudge Sauce

This is the kind that when cooked for the longer time and served hot, hardens on ice cream. Melt in a double boiler OVER not IN boiling water:
2 oz. unsweetened chocolate
1 tbsp. butter
Stir and blend well, then add
1/3 cup boiling water
2 tbsp. corn syrup
1 tsp. vanilla extract
I use the microwave to cook this on a high heat for 5 minutes then stir, cook for another 5 minutes. If you want the thick stuff, cook some more. This also makes a good addition to coffee by the spoonful.

Lemon, Orange or Lime Sauce

Combine and stir in a double boiler, OVER not IN boiling water until thickened:
1/4 to 1/2 cup sugar
1 tbsp. cornstarch
1 cup water
Remove from heat and stir in:
2 to 3 tbsp. butter
1/2 tsp. grated lemon or orange rind
1 1/2 tbsp. lemon or lime juice, or 3 tbsp. orange juice
1/8 tsp. salt

Raisin Sauce

Boil for 15 minutes:
1 1/2 cups water
1/3 cup seeded raisins
1/4 cup sugar
1/8 tsp. salt
Melt 2 tbsp. butter
Stir in until blended 1 tsp. flour
Add the hot sauce slowly. Stir and cook until it boils. Mix in a grating of lemon rind or nutmeg and serve over any steamed pudding.

Rum Sauce

Beat 2 egg yolks
Add and beat until dissolved:
1 cup sifted confectioners sugar
Add slowly, 6 tbsp. rum
Beat these ingredients until well blended.
Whip until stiff:
1 cup whipping cream
Fold in 1 tsp. vanilla
Fold the egg mixture into the cream
Serve generously over whatever pleases you!
